ROASTED SWEET POTATOES
Thanksgiving looks a little different this year, so why not shake up the menu?!? Try trading in mashed sweet potatoes for this easy roasted version. Sweet potatoes are rich in vitamins B, C and D, while fennel packs the added punch of fiber + potassium! Roast these two veggies in the oven with a little olive oil and fresh orange juice for the perfect sweet and savory Thanksgiving side dish.

INGREDIENTS​​

4 medium sweet potatoes

2 fennel bulbs

2 TBSP olive oil
-
1/4 cup fresh squeezed orange juice

1/2tsp garlic salt
-
1/2 tsp garlic granules
DIRECTIONS​​

Preheat oven to 375º F
-
Cut sweet potatoes into 3/4 to 1 inch cubes and slice fennel into long strips

Toss in olive oil and arrange in an even layer on a baking sheet

Sprinkle with garlic and garlic salt and bake on bottom shelf

Cook 50 – 60 minutes

Remove from oven and let cool, stir in orange juice and serve
