TURMERIC ROASTED CAULIFLOWER RICE
Does anyone else have cauliflower fatigue? Over the past few years, we’ve seen cauliflower transformed into pizza, rice, gnocchi, wings, and more! While I am still very much on the “cauliflower bandwagon,” this Turmeric Spiced Cauliflower Rice even appeals those who roll their eyes at the trendy veggie. Turmeric gives the cauliflower a spicy, earthy favor and a garnish of parsley and lemon brightens the dish. This recipe is quick, easy, and most importantly, delicious!
Total time: 45 mins, active prep time 10 mins, serves 4

INGREDIENTS​

1 medium-sized head cauliflower (or about a pound of pre-riced cauliflower)

1 tsp garlic granules

1 tsp garlic salt

1 tsp turmeric powder

1/4 cup parsley, chopped

1/2 lemon juiced
DIRECTIONS​

Preheat oven to 375º F

Cut cauliflower into chunks and chop in a food processor until desired texture is achieved

Arrange in an even layer on an oiled baking sheet

Sprinkle garlic, garlic salt and turmeric onto cauliflower and put in oven on bottom shelf

Stir after 15 minutes

Place back in oven for another 10 – 15 minutes (depends on the size of your “rice”)

Remove from oven and let cool, add in parsley, lemon juice and serve

Store in refrigerator up to five days
